Kaffir Lime Leaves

This small Southeast Asian citrus fruit has bright yellow-green skin whose aromatic rind is used in cooking; its glossy, dark green leaves are used for their strong lemon-floral fragrance. Both rind and leaves are available dried, and sometimes fresh in Asian markets. Thais believe that the fragrance of the kaffir lime leaf wards off evil spirits. This fragrant, green, bumpy-textured citrus fruit is a mainstay in Thai soups, curries, and dressings.
