These are common ingredients found in local cuisine. You can find these ingredients readily available in your local supermarket.

Chinese Chives

In the spring and summer, you can find fresh garlic chives, also known as Chinese chives, or gou choy, in most markets. If you see them, buy them. You won’t be sorry. They are a lot like their cousin, the ordinary Western chive, but with a distinct garlic flavor and aroma. They’re also beautiful to look at and make a wonderful garnish. Green garlic chives look like wide, long blades of grass; yellow garlic chives have shorter, more tender leaves and a mild onion-garlic flavor; and flowering garlic chives have firm stalks with small edible flower buds at the top. Look for buds that have not yet opened; they’re younger and more tender.
