Chinese Five-Spice Powder

Back in old China, the number “5” was believed to have curative healing powers; this is why there were originally five spices present in this powder. Nowadays, Chinese five-spice may contain a few more ingredients. Five-spice includes combinations of cinnamon, star anise, fennel, clove, ginger, licorice, Sichuan peppercorn, and dried tangerine peel.

The wonderful aroma of this light mocha-colored powder lends a distinct anise and cinnamon flavor to braised meats, roasts, and barbecues. Sprinkle Chinese five-spice and salt over pieces of roast chicken or pork to make plain meats more flavorful.

Look for Chinese five-spice in small plastic packages or in a jar in the spice section of most supermarkets. Store the loose powder in a jar with a tight fitting lid in a cool, dry place. It will keep for a year.
