Making Ginger Juice

You won’t find ginger juice next to the bottles of apple and grape at your grocery store, or even at the Asian supermarket. This stuff is homemade. It’s quick and easy: Start with about 3 tablespoons minced ginger. Place it in a thin, clean piece of cheesecloth or on a clean coffee filter. Tightly wrap the cloth or filter around the ginger, hold it over a measuring cup or bowl, and firmly squeeze the ginger to extract the juice. This should yield about 1 tablespoon ginger juice, although the older the chunk of ginger, the less juice it will yield. For a refreshing drink, try my “Sweet Ginger Lime Juice recipe!”
