Cucumber Fan
Slice a cucumber in half lengthwise. Then cut one of the halves into 1 to 1 1/2-inch long pieces. Using a sharp knife, thinly slice cucumber section as shown, taking care to leave one edge intact. Fold up every other slice as shown, tucking in the ends to secure. Flare out edges of cucumber and garnish edge of serving platter.
