Seafood Favorites

Seafood plays such a central role in the traditional Chinese diet, that fish farming, a current trend in the West, flourished in China centuries ago. Seafood also holds an auspicious place in Chinese culture. The word for fish, yu, is a homonym for another yu that means abundance and prosperity. So, besides being an everyday menu favorite, fish dishes feature prominently as omens of wealth and success at special events, weddings and Chinese New Year celebrations.

The fresher the seafood, the better. In addition to the supply from fish farms, thousands of fishermen still live aboard their vessels with their families, just as their forefathers did, to fish the South China Seas and meet the daily market demand."

So buy some fresh seafood, try my recipes and discover what the fuss is all about. One reminder: try not to overcook seafood.
