Sweet Tapioca with Twin Melons

4 Servings

Ingredients:

2 Tbsps. small tapiocapearls
4 cups water
1/2 cup sugar
1 cup finely diced cantaloupemelon
1 cup finely diced honeydew melon

Cooking:

1. Combine tapioca and warm water to cover in a bowl. Let stand 10 minutes. Drain and set aside.

2. Bring the water to a boil in a large saucepan over high heat. Reduce heat to low. Add tapioca and sugar; cook, stirring occasionally, 8 to 10 minutes or until tapioca becomes translucent. Remove from heat and let cool completely.

3. Divide tapioca mixture between two bowls. Stir in cantaloupe into one and honeydew into the other bowl; refrigerate until chilled. Serve chilled.
