Chinese Sausage

If you walked past a Chinese deli you might have seen slender links of Chinese sausages hanging from a rack in the window. The sausage, ranging from 4 to 6 inches in length, is deep red to brown in color and slightly bumpy in texture.

A majority of Chinese sausages are made from pork, pork fat, duck, or beef. They are simply seasoned with salt, sugar, and rice wine and must be cooked before eating. No matter what variety you buy, all are savory-sweet and delicious.

Chinese deli’s sell Chinese sausages in pairs; (about four pairs are a pound) and are held together with colored string. The color of the string represents a different type of sausage. The sausages are also available in vacuum-packed packages. Steam or boil the sausages before serving to remove excess fat, or cut them into thin slices and stir-fry with an assortment of vegetables. Store Chinese sausage in the refrigerator for up to a month or freeze for up to several months.
