You can find noodles and pasta in practically every cuisine. But noodles have a specific meaning in Asian culture. Being long, they have come to symbolize long life and long-lasting relationships. So they are often served at special occasions.

They are a versatile food: you can stir fry, deep fry, boil, steam or panfry noodles. You can cook with any ingredients, and add any seasonings to create a unique meal. You can enjoy them as a main dish, a side dish, or even as a dessert. I love noodles because they are so flexible and adaptable. Even leftovers are good!

[Photo] Martin Yan"Of all the noodles in Asia, my favorite is wonton noodles, wonderful because they are comforting and delicious. In the middle of a cold winter, try a hot bowl of wonton noodle soup at a street stand and you’ll know what I mean.

When I visit Bangkok, I love hot and spicy Pad Thai, sold at fresh food stands. The vendors at the stands use the freshest ingredients, as good as or better than restaurants.
I also love to eat chilled Japanese buckwheat noodles, with their chewy texture. Sometimes simple food is better than complex."
