DUMPLING TIPS

Keep wonton or other wrappers covered with a towel as you work so they don't dry out. Place filled dumplings on a plate dusted with a little cornstarch to prevent them from sticking to the plate. You can never have too many dumplings, so I like to make extra. I freeze them in a single layer on a baking sheet until firm, and then transfer them to a plastic container or freezer bag. Cook frozen dumplings without thawing, adding 3 to 4 minutes to the cooking time.
