SOAKING/REHYDRATING

Many of the dried Asian ingredients, such as dried black mushrooms and fungus or dried shrimp need to be soaked prior to cooking. About 30 minutes of soaking time is usually enough. While the ingredients are soaking, you can prepare and organize the other items to be used in the recipe. You may also soak, drain, and refrigerate the ingredients the night before.
