These are common ingredients found in local cuisine. You can find these ingredients readily available in your local supermarket.

SOFT TOFU (Bean Curd)

Unlike the slightly spongy and dense regular bean curd, soft tofu is silky smooth and very light in texture. Tofu tastes bland, but it readily absorbs the flavors of other foods and sauces. It is eaten hot or cold, alone or in combination with an array of foods. Cut the soft variety into tiny cubes and add to hot soups.

Tofu is available in plastic containers and cartons in the refrigerated section of most supermarkets. Check the package for its preferred storage method and expiration date. Some Asian markets sell loose bean curd, which is usually found in tubs of water. Store the cubes in a tightly sealed container, fill with water, and refrigerate. It will keep for several days if the water is changed daily. Discard any tofu that develops a strong odor.
