Stuffed Chicken Wings

Makes: 1 serving

Ingredients:

8 middle sections of chicken wings, deboned
1 Tbsp. soy sauce
1 Tbsp. soy sauce
2 tsps. cornstarch
2 tsps. cornstarch
1/4 tsp. sugar
1/4 tsp. sugar
1/4 tsp. salt
1/4 cup chicken stock
2 Tbsps. ground bean sauce
1 Tbsp. Hoisin sauce
1 tsp. sesame oil
1/4 tsp. white pepper
1/4 cup cooked ham, julienned
1/4 carrots, julienned
3 green onions, cut into 2-inch pieces
3 dried black mushrooms, soaked and thinly sliced
2 Tbsps. vegetable oil

Cooking:

1. Combine chicken wings and marinade ingredients (soy, cornstarch, sugar, salt) in a bowl; stir to coat. Let stand 10 minutes. Combine sauce ingredients in a saucepan; set aside.

2. Stuff a few pieces of ham, carrot, green onions, and mushrooms in chicken wing. Repeat with remaining chicken wings, ham, carrot, mushrooms, and green onions.

3. Heat oil in a frying pan over medium heat. Add chicken wings; pan-fry until golden and crisp on the outside and fully cooked through, 3-5 minutes per side. Transfer to a serving plate.

4. Bring sauce ingredients to a boil. Add cornstarch solution; cook, stirring, until sauce thickens. Pour sauce around chicken wings.
