MARINATING

Marinating mainly adds flavor to meats, poultry, and seafood before cooking. Foods can be marinated from 30 minutes or overnight in the refrigerator. Some recipes may specify to drain the food or lift it out of the marinade; if it's not specified, a small amount of marinade can go into the wok with the meat. The small amount of marinade will evaporate quickly and add flavor to the dish.
