GREEN CURRY
Curry comes from kari, which simply means, "sauce" in Southern India, where curry most likely originated as a way to preserve food. Curry is a blend of spices as well as a method of cooking found not just in Indian cooking, but also in Malay, Indonesia, Thai, Chinese, and Burmese cuisines. Curry powder is a complex mixture of ground spices that varies from region to region. Turmeric gives it its distinctive yellow color, and its flavor comes from several other spices, including cumin, coriander, cardamon, chilies, cloves, cinnamon, and fennel. Among Thai curries, green curry is the most popular. Green Thai chilies give green curry their distinctive color. Green curry can be made from scratch or conveniently bought as a paste in many supermarkets.
