Cool Citrus Rice Noodles
Makes: 4 servings
Ingredients:
3 Tbsps. fresh orange juice
1 Tbsp. fish sauce
2 tsps. chili garlic sauce
1-1/2 tsps. sesame oil
2-1/2 tsps. sugar
1 tsp. salt
2 cups cooked rice stick noodles, cut in 3-inch lengths
2 oranges
1 grapefruit
1 pomelo
1 tsp. chopped roasted peanuts
1 tsp. chopped roasted cashews
1 tsp. chopped walnuts
fresh mint sprigsfor garnish
Cooking:
1. Whisk together the dressing ingredients (orange juice, fish sauce, chili garlic sauce, sesame oil, sugar, salt) in a medium bowl. Add noodles and toss until well coated. Set aside.
2. To segment oranges, grapefruit, and pomelos: Slice ends off each fruit. With knife, remove peel, cutting deeply enough to remove white pith. Cutting toward center of fruit on one side of white membrane, slice fruit segment off, leaving membrane intact.
3. Put noodles in the center or a plate and arrange citrus fruit around the noodles. Sprinkle on the chopped nuts and garnish with the mint.
