QUICK CHAR SIU PORK CHOPS

Makes: 1 serving

Ingredients:

1/2 cup char sui sauce
2 Tbsps. sesame oil
1/4 cup Chinese rice wine, or dry Sherry
1 clove garlic, minced
1 walnut-sized shallot, minced
1/4 tsp. Chinese five-spice
4 center-cut loin pork chops, each about 1-inch thick
3 Tbsps. chicken broth

Cooking:

1. Combine the marinade ingredients (char sui sauce, sesame oil, rice wine, shallot, and five-spice) in a medium bowl. Add pork chops and stir to coat. Set aside for at least 30 minutes or for as long as 4 hours, turning occasionally.

2. Arrange oven rack on upper third of oven and preheat broiler. Line a baking sheet with aluminum foil and place a rack on prepared baking sheet. Lightly oil the baking sheet with some oil. Place pork chops rack, reserving marinade, cook, turning occasionally and basting with reserved marinade until no loner pink in the center, 12 to 15 minutes. Set pork chops aside to rest for 5 minutes before carving.

3. In a medium saucepan, combine remaining marinade and broth. Bring to a boil over high heat, reduce heat and simmer until sauce has thickened slightly. Remove from heat and keep warm.

4. Serve pork chops with sauce on the side.
