XO SAUCE

XO sauce is a spicy, flavorful sauce made from dried scallops, dried shrimp, garlic, and chili. The mysterious birth of XO Sauce is unknown, although it is said to have originated in higher-end restaurants in Hong Kong, where it served as a table condiment. In cooking, XO sauce is used in stir-fries to enhance flavor in stir-fried meats, seafood, tofu, and vegetable dishes. XO sauce is available at Asian supermarkets and the ethnic or international section of some groceries. Lee Kum Kee sells a brand of XO Sauce.
