TENDER PORK WITH SPICY SAUCE

Makes: 4-6 servings

Ingredients:

2 cups water
4 slices ginger
2 green onions, crushed and cut into 4 cm pieces
3/4 lb. boneless pork

Sauce
1/3-cup chicken broth
1-tablespoon chili sauce
1-tablespoon soy sauce
1-teaspoon dark soy sauce
1-teaspoon rice vinegar
1-teaspoon rice wine
1-teaspoon sesame oil
1 tablespoon chopped green onion
1/2 teaspoon ground toasted Sichuan peppercorns
1/2 teaspoon sugar

1 tablespoon cooking oil
4 cloves garlic, minced

1/2 teaspoon cornstarch, dissolved in 1 teaspoon water

2 sprigs cilantro, chopped
1 teaspoon toasted white sesame seeds

Cooking:

  1. Place water, ginger, and green onions in a small pot of water to a boil. Add pork; bring to a boil. Add pork, cover and cook 10 to 12 minutes or until center of pork is no longer pink. Remove pork and let cool. Thinly slice pork and arrange on a serving plate. Combine sauce ingredients in a bowl; set aside.
  2. Heat 1 tablespoon cooking oil in a hot wok over medium heat. Add garlic; stir-fry until fragrant. Add sauce ingredients; bring to a boil. Add cornstarch solution; cook until sauce thickens. Pour sauce over sliced pork. Sprinkle with chopped cilantro and sesame seeds.
