TOFU AND BEEF DELIGHT

Makes: 4 servings

Ingredients:

Marinade
1-tablespoon soy sauce
1-tablespoon Chinese rice wine
2-teaspoons cornstarch

3/4 pound flank steak, cut into 1/2-inch cubes

Sauce
1/3-cup chicken broth
1-tablespoon oyster-flavored sauce
1-teaspoon chili garlic sauce

1 tablespoon cooking oil
2 teaspoons minced ginger
1/2 medium onion, chopped

1 14-ounce package regular-firm tofu, drained and cut into 1/2-inch cubes

1-teaspoon cornstarch dissolved in 2 teaspoons water

Cooking:

  1. Combine marinade ingredients in a bowl. Add beef and stir to coat. Let stand for 10 minutes. Combine sauce ingredients in a small bowl; mix well.
  2. Place a stir-fry pan over high heat until hot. Add oil, swirling to coat sides. Add ginger and onion; cook, stirring, until fragrant, about 1 minute. Add beef and stir-fry until no longer pink, about 2 minutes. Add tofu and sauce; stir and bring to a boil. Add cornstarch solution and cook, stirring, until sauce boils and thickens.
