POACHED PEARS IN RED WINE

Makes: 4 servings

Ingredients:

3 kiwifruit
2-tablespoon sugar
3 pears
1 tablespoon white vinegar

Poaching Liquid
3 cups red wine
1/2 cup water
1/2 cup sugar
1 tablespoons black tea leaves
3 whole cloves
1 stick cinnamon

Orange segments or apricot slices

Cooking:

  1. Peel kiwifruit and place with sugar in a food processor. Puree until smooth; set aside.
  2. Peel pears; remove cores with a melon baller. Place pears in a bowl and cover with water to prevent browning.
  3. Combine poaching liquid ingredients in a saucepan. Bring to a boil over high heat. Drain pears and add to poaching liquid; bring to a boil. Reduce heat to low and simmer until pears are barely tender, about 30 minutes.
  4. To serve: Spoon kiwi sauce onto a dessert plate. Cut pears in half. Slice pear half, but do not cut through to stem. Gently fan pear slices and place over sauce. Garnish with orange segments or apricot slices.
