RICE WINE

Fermented mainly from glutinous rice and water, this type of wine differs from its grape-based Western cousin. Among the most world-renowned is the amber-gold colored rice wine made in Shaoxing, near Shanghai. Before you raise your glass with this drink, know that China produces rice beverages in the same category of whiskey and vodka, sometimes reaching a potent alcohol content up to 130 proof! This smooth, nutty wine resembles sherry and is a popular flavoring ingredient in Chinese cuisine. Rice wine is prevalent through many of Shanghai's famous 'drunken' dishes. Sip rice wine lightly, hot or cold.
