PEARL TAPIOCA WITH SWEET MELONS

Makes: 4 - 6 servings

Ingredients:

2 tablespoons small tapioca pearls
4 cups water
1/2 cup sugar
1/8-teaspoon salt
1 cup finely diced cantaloupe melon
1 cup finely diced honeydew melon

Cooking:

  1. Combine tapioca and warm water to cover in a bowl. Let stand 10 minutes. Drain and set aside.
  2. Bring 4 cups water to a boil. Reduce heat to low. Add tapioca and sugar; cook, stirring occasionally, 8 to 10 minutes or until tapioca becomes translucent. Remove from heat and let cool. Stir in cantaloupe and honeydew; refrigerate until chilled. Transfer to serving bowls. Serve chilled.
