LOTUS ROOT

Lotus root resembles a thick, off-white sausage, that when cut reveal a lacy-pattern of rings. Before you cook lotus root, peel it and slice it into rounds. When fresh, it has a nice crisp texture and leaves a subtle sweet nutty taste in your mouth. Add it to stir-fries, salads, or deep fry thin lacy slices as chips. Look for fresh lotus root in the produce section of your Asian or regular food market.
