STIR-FRIED ASPARAGUS AND LONG BEANS

Makes: 4 servings

Ingredients:

1/2 pound long beans
1 pound asparagus
1 tablespoon vegetable oil
2 cloves garlic, minced
3 green onions, chopped
1-tablespoon pine nuts
1/4-cup chicken broth
2 teaspoons soy sauce
1 teaspoon sugar
1/2 teaspoon red pepper flakes
1/4 teaspoon sesame oil
1/2 teaspoon cornstarch dissolved in 2 teaspoons water

Cooking:

  1. Cut long beans into 2-inch long pieces. Trim asparagus and cut into 2-inch long pieces.
  2. Place a stir-fry pan over high heat until hot. Add oil, swirling to coat sides. Add garlic, green onions, and pine nuts; cook, stirring, until fragrant, about 20 seconds. Add long beans, stir-fry, until almost tender, about 2 minutes. Add asparagus and stir-fry for 2 more minutes. Add broth, soy sauce, sugar, and red pepper flakes; stir. Cover and cook until asparagus is tender-crisp, 1 to 2 minutes. Add sesame oil and cornstarch solution and cook, stirring, until sauce boils and thickens. Transfer to serving plate and serve.
