BEEF AND SHRIMP CUCUMBER CUPS

Makes: 10 cucumber cups

Ingredients:

Filling
2 ounces ground beef
2 ounces raw shrimp, shelled, deveined, and finely chopped
1 tablespoon green onion, chopped
1-tablespoon light soy sauce
1/2 teaspoon sugar
1/8-teaspoon white pepper

2 cucumbers, cut into 1-1/2-inch lengths; seeds scooped out
2 tablespoons cornstarch
1/4 cup chili garlic sauce

Cooking:

  1. Preheat oven to 350°F.
  2. Combine filling ingredients in a bowl.
  3. Dust the inside of each cucumber cup with cornstarch, and then pack with 1 tablespoon of the filling. Place cups filled side up, in a shallow baking pan. Bake uncovered until filling is firm, 18 to 20 minutes. Serve with chili garlic sauce.
