OYSTER-FLAVOR SAUCE
Oyster-flavored sauce is a thick, dark brown all-purpose seasoning sauce made from oyster extracts, sugar, seasonings, and cornstarch. It has a distinct sweet-smoky flavor that goes well with practically any meat and vegetable combination.
Oyster-flavored sauce is one of the most common ingredients in Cantonese cooking. In Chinese home-style cooking, oyster-flavored sauce is drizzled over simple dishes such as steamed Chinese broccoli and savory custard eggs. Its rich flavor and deep color will enhance the taste and appearance of any stir-fried dish or fried rice. Use oyster-flavored sauce as a dipping sauce for roast pork and chicken.
There are now a few variations of oyster-flavored sauce available in Asian markets, including hot and vegetarian style sauces. Refrigerate an open bottle of oyster-flavored sauce and it will keep for a year.
