SWEET LOBSTER WITH BLACK BEAN SAUCE

Makes: 4 servings

Ingredients:

2 lobster tails, each about 8 ounces

Seasonings
4 cloves garlic, minced
2 green onions cut into 1-inch lengths
1 teaspoon minced ginger
2 teaspoons black bean garlic sauce

1 tablespoon cooking oil
1/3-cup chicken broth
1/4 cup Chinese rice wine
2 teaspoons cornstarch dissolved in 1-tablespoon water
1-teaspoon sesame oil
1 green onion, cut on a diagonal into 1-1/2 inch pieces

Cooking:

  1. Remove lobster meat by cutting along the inner edges of the soft under shell. Using a fork, remove meat from shell. Cut meat into 1-inch pieces.
  2. Combine seasonings in a small bowl.
  3. Place a stir-fry pan over high heat until hot. Add oil, swirling to coat sides. Add seasonings; cook, stirring, until fragrant, about 30 seconds. Add lobster and stir-fry until opaque, about 2 minutes. Add broth and wine; bring to a boil. Add cornstarch solution and cook, stirring, until sauce boils and thickens, about 30 seconds. Stir in sesame oil and green onion.
